Pressure cook or boil low and slow until meat falls off bones. Pick out the bone and tendons and use it for dang near anything you would use poultry for.
I like to shred it, frazzle in hot oil, season with fajita or taco seasoning and use it for soft tacos or fajitas....good stuff.
Also makes great turkey salad....mayo, lime juice, chopped almonds, salt and pepper, hard boiled egg, onion, celery.....good stuff.
