As far as the Pull Weight, Does it matter what it is set at ? I realize that a person has to be able to pull it back & all but what is the standard for hunting Whitetail / Turkey etc . ?

More draw weight allows you to (or, more appropriately, mandates that you) use a heavier arrow. A heavier arrow flying at a high speed makes more kinetic energy than an lighter arrow flying at the same speed. You don't need all that much KE to hunt whitetail and turks. With the cams in most of today's bows, a 40 lb draw will fling the arrow plenty fast enough for shots out to 25 yds or so.

You want to be able to hold the bow out in front of you and draw it with out jacking the front of the bow up in the air in order to get the needed leverage to draw it.

Like jmmcguire said 40 pounds, a Muzzy and put it where it needs to go will kill both of those critters good !
