It was a cornucopia of fowl - little duck, little Canada goose, and a whole lotta snows.
Just a "habit" to refer to it as duck sausage.
Ended up with 150 lbs of jalapeno/cheddar slim jims, 150 lbs of habenero BBQ slim jims, 100 lbs of jalapeno/cheddar stick sausage, 100 lbs of habenero BBQ stick sausage, 200 lbs of old fashioned cold smoke stick sausage.
We have a group of guys who have been getting together for years making it - did 800 lbs of deer sausage last weekend.
CJ came down and helped with the process on the deer sausage last week.
CJ - I'll have your duck as soon as it's done smoking - probably package Wednesday night! :cheers:
