To build soil, we used to plant wheat and then frost seed sweet clover into the wheat, harvest the wheat and let the clover grow until the next spring, then plow it under and plant soybeans.

Now days, I would skip the plow and use roundup and no-till the soybeans.
 
I have seen the sweet clover get 6 foot tall, so tall that you had to be careful not to run into the back of the plow in front of you.

I have no idea how deep the roots can go.
