For a factory knife it's tough to beat the Victorinox Forchsnor line. I like the flexible blade, at least 5" long. Curved and straight both have their place and to a certain extent some of that is personal preference.

Its a good knife, takes a shaving sharp edge and holds it long enough to cut up a deer or two. Easy to touch up when it dulls, good handles and dishwasher safe. I probably have two dozen various Victorinox kitchen knives around here and have no complaints about them.

I ran across these at the restaurant depot, and my BBQ buddy said a lot of the comp bbq guys use them. I bought 2 and am really impressed. The handles on the PRO line are like hogue grips, they are pretty sweet:

I have several of these. Theres a knife shop in KC that supplies a lot of the grocery store butchers. This is what they recommended and what most butchers use. Great knives.

My fav. for deboning deer is my Gerber Flayer,Rapala for fish
